01 - Place a non-stick skillet over medium heat, then add the butter or olive oil.
02 - Scatter the crumbled feta cheese evenly in the pan and allow it to melt and sizzle for about 1 minute, until slightly golden at the edges.
03 - Carefully crack the eggs over the melted feta, spacing them apart in the skillet.
04 - Sprinkle with black pepper and, if desired, red pepper flakes to taste.
05 - Cover the skillet with a lid and continue to cook for 3 to 4 minutes, just until the egg whites set but yolks remain slightly runny.
06 - Remove from heat, top with fresh parsley or dill, and serve promptly.
