03 - 8 slices Genoa salami
04 - 8 slices deli ham
05 - 8 slices mortadella
06 - 8 slices capicola
07 - 1 large tomato, thinly sliced
08 - 1/2 red onion, thinly sliced
09 - 1 cup shredded iceberg lettuce
10 - 8 pepperoncini peppers, sliced (optional)

→ Grinder Salad

11 - 1/2 cup mayonnaise
12 - 2 tablespoons red wine vinegar
13 - 1 teaspoon dried oregano
14 - 1/2 teaspoon garlic powder
15 - 1/2 teaspoon freshly ground black pepper
16 - 1/4 teaspoon red pepper flakes (optional)
17 - Salt, to taste

# How to Make It:

01 - In a medium bowl, blend mayonnaise, red wine vinegar, oregano, garlic powder, black pepper, red pepper flakes, and salt until homogenous.
02 - Add shredded iceberg lettuce and thinly sliced red onion to the dressing. Toss thoroughly to coat veggies evenly, then set aside.
03 - With a bread knife, slice each hoagie roll lengthwise, keeping one side intact to act as a hinge.
04 - Arrange 2 slices provolone cheese and 2 slices each of Genoa salami, deli ham, mortadella, and capicola on the bottom half of every roll.
05 - Lay several slices of tomato evenly over the meats in each sandwich.
06 - Generously spoon the prepared grinder salad mixture over the tomato and meats.
07 - Top with sliced pepperoncini, if desired, for added zest.
08 - Fold the rolls closed and apply gentle pressure to secure the layers. Serve the grinders immediately for best texture.
