03 - Spread granola mixture evenly on prepared baking sheet. Bake for 12 to 15 minutes, stirring once halfway through, until golden brown. Transfer to cool completely.
04 - In a small bowl, combine Greek yogurt with lemon juice, lemon zest, and honey. Whisk until smooth and well blended.
05 - In another bowl, gently toss fresh blueberries with 1 tablespoon honey until evenly coated.
06 - In serving glasses or bowls, layer lemon yogurt, honeyed blueberries, and cooled granola. Repeat layers as desired, finishing with a granola sprinkle on top.
07 - Serve immediately or refrigerate for up to 2 hours for a chilled parfait.
