04 - Gently fold in freeze-dried strawberries, chopped dried strawberries if desired, and mini white chocolate chips if using.
05 - Using clean hands or a cookie scoop, portion and roll the mixture into 1-inch balls to yield approximately 16 bites.
06 - Arrange the energy bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to set before serving.
