# How to Make It:

01 - Arrange chicken thighs in a single layer at the bottom of the slow cooker.
02 - In a medium mixing bowl, whisk together pineapple chunks with juice, soy sauce, brown sugar, rice vinegar, minced garlic, and grated ginger until thoroughly combined.
03 - Pour the pineapple sauce evenly over the chicken. Add bell peppers and sliced onion on top, if using.
04 - Cover and cook on high setting for 4 hours, or on low setting for 6 to 7 hours, until chicken becomes very tender.
05 - For a thicker sauce, mix cornstarch with 2 tablespoons cold water and stir into the slow cooker 30 minutes before serving. Cook uncovered to thicken.
06 - Shred chicken using two forks directly in the slow cooker or leave whole as desired. Stir well to incorporate with the sauce.
