01 - Rinse peppermint leaves thoroughly under cold running water.
02 - Bring 2 cups of water to a gentle boil using a small saucepan or kettle.
03 - Remove water from heat, add peppermint leaves, cover and steep for 5 minutes.
04 - Strain the herbal infusion into teacups using a fine mesh strainer.
05 - Add honey or agave syrup to taste and garnish with lemon slices if desired, serve hot.
